Vegan and Gluten free

This is a simple and easy recipe to make and it is healthy too.


170 grm           Gluten free pasta

1 tbsp                   Basil

1 tbsp                   Onion

1 tsp                     Grated garlic

½ tsp                     Grated ginger

1 tsp                     crushed red peppers

½-1 cup                Chopped spinach

1 tbsp                   Coconut oil

½ tsp                     salt


Cook pasta as per directions on package. Sautee the onion, garlic, ginger, basil, pepper, in coconut oil for 1 minute or until cooked. Add cooked pasta, spinach and salt, stir well. You can top with your favorite toppings.

Avocado Cucumber Salad

1 sm/med            Avocado

½                           English cucumber

1 cup                    chopped greens of choice

Chop avocado and cucumber into small pieces as desired. Add chopped greens. Add dressing (1/2 tsp lemon juice, salt and olive oil) and toss. Enjoy.
