Vegan, Gluten Free

This is a very healthy and satisfying soup, packed with nutrients and easy to make. Pumpkin is very nutritious and is high in vitamin A, C, Potassium, Manganese to name a few. Pumpkin is also low in calorie as it’s about 94% water, makes it great for detox or weight loss. This recipe uses fresh herbs and homemade coconut milk. I used frozen coconut and water to make my coconut milk. Just blend together coconut and water, then strain using a nut milk bag, cheese cloth. I didn’t have either of those and proceeded to use a strainer instead. Turned out pretty good 🙂

Ingredients

2 cups chopped pumpkin

1 sprig of rosemary

1 tablespoon of thyme

1 small green chili pepper

1 tsp salt (adjust according to taste)

2 cups fresh coconut milk

Method

Wash and cut pumpkin into small pieces with skin on, steam for about 10 mins or until a bit tender. Add pumpkin and all other ingredients to blender and blend well. Top with your favorite vegetables. That’s it. So easy and delicious.
