This is a healthy version of Indian curry, that is very easy to make. Less cooking time and no oil required. Vegetables shouldn’t be cooked too much, otherwise it will lose it’s nutritional value. When you cook this way, you can eat more veggies and less rice or naan. I always try to use fresh herbs as much as possible. This wholesome, healing curry is a great addition to your diet.

Ingredients

2-3 cups vegetables

salt to taste

Blender Ingredients

1 medium tomato

5 curry leaves

2 tablespoons coriander

.5 inch piece ginger

1 green chili pepper

1 tsp turmeric

.5 tsp black pepper

Method

Add blender ingredients with water to blender and blend well, add blended ingredients to pot and cook for about 3 minutes. Add Vegetables and water as needed and cook for a few minutes. Serve with rice or naan. Enjoy šŸ™‚
