This is an awesome meal for those days where you need a little comfort 🙂 plus it easy to make.

Ingredients

lentils – I used brown lentils

Veggies – I used mushrooms, zucchini, carrots, red & green peppers

Red onion – 2 tbsp chopped

3 cloves garlic

Fresh Herbs – I used thyme, rosemary, cilantro

Crushed red peppers

-Ground Cumin – 1/2 tsp

Salt to taste

1 can vegan gravy

Coconut Oil – 1 tbsp

Instructions

Boil lentils in water until soft, add a bit of salt if needed. Drain and set aside. Chop veggies and set aside. Add coconut oil to pan, then add onions, garlic, herbs, cumin, and crushed peppers and sautee for a few minutes(1-2). Add veggies and sautee for about 3-5 minutes or until veggies are bit tender. Add lentils, salt and vegan gravy..cook for 3-5 minutes on medium heat. You can add a bit of water to the gravy if you wish. Serve over mash potato,
