One of my favourite breakfast and it is super delicious.

Tofu Scramble

Ingredients

1/4 Organic non Gmo firm/ medium firm tofu

1/4 tsp turmeric

Veggies of choice

1 tbsp Coconut nut oil

Salt and pepper to taste

Crumble tofu add all ingredients except coconut oil and mix well, I used my hands for mixing. Heat the coconut oil in non stick pan for a minute, add mixed tofu sauté for 3-5 minutes on medium heat and set aside.

Smashed avocados 🥑

Ingredients

1 small/medium avocado

Salt and pepper to taste

Optional: red onions

Add avocado to container and mash using fork or you can use what works for you. Add red onions salt and pepper and mix well.

Putting it all together

Spread smashed avocados on bread of choice(I used gluten-free whole grain), add sliced tomatoes and tofu scramble. Enjoy 😉
